Severn Vale Damson Preserve

Description

Late each summer we comb the Vale hedgerows for damsons — small, tart and impossibly purple. They are slow-set the same day in our copper pans with nothing but sugar and a little lemon, so the flavour stays bright and the colour stays jewelled.

Wonderful on warm sourdough, folded through rice pudding, or spooned beside a wedge of our mature cheddar.
